Beijing - Alameda's Chef on Brazilian Wines

Chinese culture

Geraldo Thomazini of Alameda thinks Brazilian wines are perfect for spring. But that's not all that's new for the season--he tells us all about their new Sunday Latin brunch.

What’s new on Alameda’s menu for spring? We will start a Sunday Latin brunch with a different formula from the other restaurants in Sanlitun this month, and for our daily menu I’m going start to use lighter ingredients. We’re also thinking about having a light set menu with no butter or cream. We’re going to try more fusion food between Asian cuisine and Latin cuisine.

Do you have any Brazilian wines at Alameda? Most people don’t believe that Brazil makes wines; when we talk about Brazil, everybody knows football, carnival, and some people know bossa nova. But the wine industry in Brazil started more than 100 years ago. Our best Brazilian wine is Miolo Lote 43 (¥888).

If you could go to any country for a month to study the cuisine, where would you go? Before I came to China, I had a dream to study in France or Italy, but now after trying the real Asian taste, I want to go Thailand, Cambodia, Vietnam. I really want to go these places and study more about their techniques and combinations. The foods are so flavorful, fresh, exotic and simple.
